Rửa sạch lớp bẩn bám ngoài vỏ trứng. Cho hột vịt vào nồi, đổ nước ngập hột vịt. Bật bếp, bắt nồi hột vịt lên bếp luộc 15 phút. Sau đó đổ hột vịt ra rổ để nguội bớt.
Hột vịt sau khi đã nguội bơt. Đập và tách bỏ vỏ hột vịt. Cho trúng vào 1 cái tô sạch.
Cho 1 muỗng me vào chén sạch. Đổ 50ml nước sôi vào chén me. Dùng muỗng dầm me trong nước sôi cho me ra bột nước chua như hình.
Nhặt lá rau răm, bỏ cọng. Sau đó rửa sạch rau răm và để ráo nước. Tỏi, tách tép, đập dập và bóc bỏ vỏ tỏi, băm nhuyễn tỏi.
Bật bếp, bắt chảo lên bếp. Cho vào 1 muỗng canh dầu ăn, cho tỏi đã băm vào phi thơm vàng đều. Tiếp tục cho chén nước me đã dầm vào xào thơm.
Cho vào chảo me 2 muỗng canh nước mắm + 3 muỗng canh đường + 1 muỗng cà phê bột ngọt. Xào đều tay cho me thấm đều gia vị, nêm nếm lại cho vừa ăn. Sau đó, cho tô trứng lộn đã tách vỏ vào chảo sốt me.
Dùng đũa đảo nhẹ tay cho trứng thấm sốt me. Nhớ đảo nhẹ nhàng để trứng không bị nát. Hạ nhỏ lửa, rửa sạch ớt khô cho vào chảo trứng đang sốt, rim trứng trong nước sốt cho cạn bớt nước. Thấy sốt cạn sền sệt là được. Tắt bếp, múc trứng ra dĩa, rắc ít đậu phộng rang lên, ăn kèm với rau răm và chấm muối tiêu chanh.
